Pistachio paste is a pure product made by roasting and grinding raw pistachios, produced without any additives or added sugar. With its intense aroma and vibrant green color, it has become an indispensable raw material in gelato, baklava, chocolate, and specialty culinary applications.
How is Pistachio Paste Made?
Quality pistachio paste production starts with raw material quality. Selected, cleaned raw pistachios from Gaziantep are lightly roasted at controlled temperatures. After a cooling phase, they are ground in industrial mills to the desired consistency. Temperature control during this process is critical — excessive heat negatively affects both color and aroma.
